Fresh lentil salad with feta cheese



Ingredients (for 4, or 2 very hungry ones)

-150g lentils

-150g quinoa

-2 sweet red peppers

-150g cherry tomatoes

-1 cucumber

-1 red onion

-juice of 1/2 lime

-2 tbsp balsamic vinegar

-1 tbsp olive oil

-parsley

-150g feta cheese

-some sundried tomatoes





How to?

1)Rinse the quinoa and cook as directed on the package.

2)Cut all veggies and put in a salad bowl or a big plate. Mix with the quinoa when ready.

3)Add the lentils (drain if needed) and mix again.

4)Make the dressing: mix 2 tbsp balsamic, 1 tbsp olive oil and juice of 1/2 lime.

5)Crumble the feta cheese over the salad and finish with fresh parsley, some sundried tomatoes and the balsamic dressing.
